All in a Day

You know it's a good day when...the peach mango jam turned out beautifully, candied jalapeños are ready to go for Christmas, and the jelly finally reset! Now everyone in the family will have his/her own personal, edible gift straight from my kitchen.

  2. Absolutely...but proceed at your own risk! My post "The Making of Jalapeno Jelly" gives a recipe I used to cut back on the vinegar flavor, but I had to reset that batch, so I'm not sure I would follow that one again.

    The recipe that finally worked for me is the one off the Ball liquid pectin box. However, I think the directions are misleading in that it appears you are to use both packages of the liquid pectin. NO! You will only use one package, and I cut the cider vinegar down to 1/2 cup mixed with the jalapenos at first and then just 1 cup after that.

    The freezer peach mango jam was simple. Again, I used the Ball freezer jam package and just added a very ripe mango to the fruit puree. The batch set up perfectly and was very tasty, similar to marmalade.
